¾ c bacon grease
2 c onions, chopped
2 T garlic, minced
1 c bell pepper, chopped
1 c celery and leaves, chopped
¼ c flour
15 oz can tomato sauce
2 c shrimp or seafood stock
3 c fresh tomatoes, diced
1 c green onions, chopped
2 T sugar
3 bay leaves
2 T Sriracha sauce
½ t lemon juice
½ t thyme
1 t white pepper
1 t basil
1 T Worcestershire sauce

2 - 2½ lbs shrimp, peeled and de-veined
½ stick butter
½ c parsley
rice

Directions:
Directions:
Heat bacon grease. Add onions, garlic, bell pepper, and celery. Saute 20 minutes. Add flour and brown, about 10 more minutes. Add tomato sauce and simmer 5 minutes.

Add stock and simmer 10 minutes. Add tomatoes, green onions, sugar, bay leaf, Sriracha, lemon juice, Worcestershire sauce, and the rest of the seasonings. Simmer 40 minutes stirring occasionally.

Add spices to taste, may need red pepper or Tony's. Add shrimp and simmer 10 minutes. Cut in butter, melt, stir, top with parsley and serve over rice.
