⅔ c chopped onions
3 Tbsp oil
1 c raw converted white rice
1 c chopped green peppers
1 tsp chili powder
1 (8 oz) can whole tomatoes
2 tsp salt
Chopped fresh tomato and green peppers are optional

Directions:
Directions:
I brown my rice with the onions. If I don't have whole tomatoes I will use stewed tomatoes or Rotel and not use the chopped green peppers.
In medium-size heavy skillet with tight-fitting cover, sauté onion in hot oil. Stir in rice, 1 cup green peppers, chili powder canned tomatoes, and salt. Add 2 cups water. Bring to boiling, then reduce heat, and simmer covered, 20 minutes or until liquid is absorbed and rice is cooked. Garnish with chopped tomato and green pepper.
