Oven Jerked Chicken Recipe

2- bone in with skin chicken breasts- cut in 1/2
6 chicken thighs
6 drumsticks
1/3 c lime or lemon juice
2 T liquid smoke (Hickory)
1/2 c Jerk Marinade- see below

Directions:
Directions:
Pour lemon or lime juice over chicken then discard juice.
Bake chicken uncovered at 350 degrees for 20 minutes
Remove from oven & discard liquids
Allow chicken to cook to room temp, then sprinkle liquid smoke over it. Pour the jerk marinade over chicken. Cover with foil & marinate overnight in refrigerator.
When ready to cook preheat oven to 425 degrees. Place the covered pans in oven & cook for 20 minutes. Lower temp to 275 degrees & cook for 1 hour.

To serve chop chicken to liking, waiting 10 min for juices to absorb some. Serve with pan juices

Jerk Marinade:
1 t allspice
1/2 t nutmeg
1/2 t cinnamon
1/2 c finely chopped green onions
4 scotch bonnet or 6 jalapeno peppers slice in 1/2 with seeds
1/4 c white vinegar
1/4 c soy
2 T veg oil
1 T salt
Combine all in blender to liquify
Will keep refrigerated indefinitely
