Ingredients (Makes two loaves)
-3 Eggs *Optional: ½ Cup Raisins
-1 ½ Cups White sugar
-1 Cup Vegetable oil
-2 Cups of finely grated Zucchini (Peeled)
-3 Cups Flour
-1 tsp Baking soda
-1 tsp Cinnamon
-¾ Cup Walnuts
-2 tsp Vanilla
-1 tsp Baking powder
-1 tsp salt
-½ tsp nutmeg

Directions:
Directions:
Preheat the oven to 350º. Beat the eggs and gradually add in sugar while mixing it. Beat well. Add oil and vanilla. Stir in zucchini. Add dry ingredients, nuts and raisins (optional). Grease two loaf pans. Line bottoms with wax paper. Pour batter in pans equally. Bake at 350º for 45-50 minutes. Cool in pans for a few minutes and then turn out on racks.
