-1 Cup White Sugar
-½ Cup Shortening
-2 Eggs
-½ Cup Milk OR Orange juice (adds good flavour)
-1 ½ Cups Flour
-2 tsp baking powder
-½ tsp salt
-Grated rind of 1 lemon
-Juice of 1 lemon and a ¼ Cup of sugar

Directions:
Directions:
Preheat the oven to 350º. Cream the sugar and shortening together, then add two eggs and blend it all together well. Add together milk/juice, flour, baking powder, salt and lemon rind. Mix juice of 1 lemon with an additional ¼ Cup of sugar and pour it over the loaf after it comes from the oven. Line Loaf pans with wax paper. Bake at 350º for 40 minutes or until done (Centre springs back when touched). Turn out on a rack. Remove paper from the bottom. Turn over and pour juice/sugar mixture over top. Allow to cool before cutting.
