1 egg
1 cup self-rising flour (or 1 cup all-purpose flour, 3 tsp baking powder and ½ tsp salt)
¾ cup milk
1 Tablespoon sugar
2 Tablespoons shortening, melted

1 cup blueberries (optional)
1 cup chocolate chips (optional)

Butter
Syrup

Directions:
Directions:
Beat egg until fluffy.
Add in flour, sugar and melted shortening0, stir only until smooth,
Add blueberries or chips if desired.


Grease griddle and heat with medium heat.

Pour 2 Tablespoons of batter onto hot griddle for each pancake.

Cook pancake until puffed and dry around the edges.
Turn and cook other side until golden brown.
Remove and butter when hot.

regrease griddle as needed.

Pancakes and bacon was a family favorite for breakfast. They especially enjoyed them with Boysenberry syrup.
