2 c. – all-purpose flour
1½ c. – sugar
1½ tsp. – baking powder
½ tsp. – baking soda
1 tsp. – salt
juice & grated rind from 1 orange
2 T. – shortening, melted
1 – egg, well beaten
2 c. – cranberries, halved*
½ c. – pecans, chopped

Directions:

Sift together flour, sugar, baking powder, baking soda and salt. Combine in measuring cup orange juice, rind, melted shortening and enough water to make ¾ c. Stir in orange juice mixture and egg with dry ingredients. Mix just enough to moisten. Fold in cranberries and nuts. Spoon into loaf pan with waxed paper in bottom. Spread evenly making corners and sides slightly higher than center. Bake at 350º for 1 hour and 10 minutes. Remove from pan while still warm. Cool on rack.
