1½ c. – yellow corn meal
3 T. – all-purpose flour
1 tsp. – salt
1 tsp. – baking soda
2 c. – buttermilk
1 – egg
2 T. – bacon drippings OR melted butter

Directions:
Directions:
Sift dry ingredients into bowl. Add buttermilk, egg, and butter (or drippings). Stir until combined. Fill greased muffin tins 2/3 full or pour in to greased 10 inch iron skillet. Bake at 450º for about 20 minutes or until brown. Makes 12 medium muffins.
