1 c. sugar
c. shortening
2 eggs
1 tsp. vanilla
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
tsp. salt
2 c. apples, pared & chopped (about 4 medium)
c. chopped nuts
1 T. sugar
tsp. cinnamon, ground

Heat oven to 350. Grease and flour 9 x 5 x 3 loaf pan. Mix 1 c. sugar, shortening, eggs, and vanilla. Stir in flour, baking powder, baking soda, and salt until smooth. Stir in apples and nuts. Spread in pan. Mix 1 T. sugar and the cinnamon; sprinkle over batter. Bake until wooden pick inserted in center comes our clean, 50 to 60 minutes. Immediately remove from oven; cool completely before slicing. Store tightly covered. Makes 1 loaf.
