"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Mix all dry ingredients. Add milk gradually and blend until smooth. Knead dough for approximately 2 minutes. Divide into 4 or more pieces. Take one section and roll out to a round shape about 8 1/2 inches in diameter, or smaller if desired.

Before cooking, pierce each tatiyas with a fork several times. Cook on a griddle over medium heat until the edges look dry (approximately 3 minutes). Flip, and cook an additional 2-3 minutes.

Personal Notes:
This goes great with many different dishes and can be used in lieu of a bread or other starch. Definitely should be served with my Beef Kelaguen recipe!

Coconut milk can usually be found in the ethnic foods aisle of most grocery stores and gives the tatiyas a very good flavor, but regular milk will work.
