2 bunches of collard greens
3 tbsp olive oil
4 slices bacon finely diced
2 onions chopped
3 cloves of garlic chopped
1/2 tsp salt and pepper
1 tsp red pepper flakes (put in shot glass and fill with water and let set until end)
1/2 cup chicken stock

Directions:
Directions:
1. Remove stems, wash, and pat dry
2. Stack 3-4 leaves together and roll tightly, slice thinly
3. Heat olive oil in large dutch oven. Add bacon and saute 3 min until lightly browned
4. Add collard greens in 3 batches, cooking 1 min after each addition. Stir frequently. Add chicken stock after you add collard greens.
5. Continue cooking for 25 min until tender
6. Add salt and pepper and red pepper mix.
7. Simmer 2 more min
