Baked Fish Sticks Recipe

1 lb. skinless haddock fillets (or any white fish)
3/4 c. + 1/2 c. flour, divided
3/4 c. coconut milk
1/2 c. panko bread crumbs
2 t. parsley flakes
1 1/2 t. old bay seasoning
1 t. ground mustard
3/4 t. paprika
1/4 t. salt
1/8 t. pepper
cooking spray (I use avocado oil spray)

Preheat oven to 450º, spray a baking sheet with cooking oil and set aside

Prepare fish by thoroughly drying with paper towels, then cutting into small rectangles about 3" long by 1/2" wide

Prepare a breading station by putting 3/4 c. flour in one shallow dish, 3/4 c. coconut milk in another shallow dish, and finally the 1/2 c. flour, panko and seasonings in a third shallow dish (I use cake pans)

Coat each fish stick in the flour, then lightly dredge in the coconut milk, then fully coat in the flour-panko breading

Arrange on prepared baking pan, leaving space between each fish stick so they crisp properly

Spray tops of fish sticks with cooking oil

Bake 10 minutes, flip and bake an additional 10 minutes

Broil on low for 3-4 minutes, or until crispy




Fish sticks are a fun finger food for kids! The seasoned breading makes these exciting for adults, too!
