3 lbs crawfish or shrimp tails
3 sticks margarine
3 onions, diced
3 celery ribs, chopped
2 bell peppers, finely chopped
3 garlic pods, minced
4 T parsley
1/4 cup flour
1 pint half & Half
1 lb jalapeño cheese
1 lb fettuccine
Parmesan cheese to sprinkle on top

Directions:
Boil and drain fettuccine. Cut jalapeño cheese into chunks. Dissolve flour in the half & half. Melt margarine in skillet. Sauté onions, celery and bell peppers in the skillet. Add garlic and parsley. Add the half & half and flour mixture to skillet. Then add cheese. When cheese is melted, add crawfish tails or shrimp. Blend into or fold into the fettuccine. Put in a 13 x 9" casserole dish and bake at 350º for 45 min. Sprinkle Parmesan cheese on top of casserole before baking.
