2 tbsp oil
1 cup uncooked long-grain white rice
1 1/2 cups chicken broth
8 oz can tomato sauce or salsa (I prefer salsa)
1 tsp chili powder
1 tsp garlic salt
1/2 tsp ground cumin

Frozen peas and carrots, cooked in microwave

Directions:
Directions:
Rinse rice to remove extra starch. Heat oil in 4-quart saucepan over medium heat. Add the rice and cook until translucent, about 3-4 minutes. Stirring constantly.

Add the rest of the ingredients (except peas and carrots) and bring to a rapid boil over high heat.

Stir once and cover. Turn the heat down to low/simmer and cook for 20 minutes. Remove cover and let stand 2-3 minutes before fluffing with a fork and adding hot peas and carrots.
