1 pound trimmed Brussels sprouts
1 diced granny smith or honey crisp apple
2 ounces shaved Parmesan cheese
1/3 cup pecans
6 T olive oil
1 T lemon zest
1/4 cup lemon juice
1/2 tsp crushed red pepper1 T honey
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
Mix together olive oil, lemon zest, lemon juice, crushed red pepper, honey, salt and pepper. Set aside. Thinly slice Brussels sprouts, dice apple and toast and chop pecans. Toss sprouts, apple, pecans and Parmesan cheese together in bowl. Toss with half of the dressing. Serve with additional dressing on the side.

Debuted this recipe at Audrey's 11th birthday party with great reviews. You can save time by purchasing the Brussels sprouts already shaved in the produce aisle. I was able to find them at both Trader Joe's and Wegman's.
