4 whole trout, center cavity cleaned
2 tsp. Kosher salt
2 tsp. pepper
8 sprigs rosemary
2 lemons, thin sliced
2 oranges, thin sliced
1 fennel bulb, thin sliced
olive oil
kitchen twine
charcoal or gas grill

Directions:
Directions:
Heat your grill in advance. Season the cavity of each trout with salt and pepper. Stuff evenly with citrus slices, rosemary and fennel. drizzle lightly with olive oil. Tie each stuffed trout in 3 or more areas with the kitchen twine, making sure to double knot each one. Cut off the excess twine. Rub the outside of each fish with olive oil and season again with salt and pepper. Oil the grates and place trout on the hot grill. Cook about 7 minutes per side, depending on size of fish.

I grew up only eating trout breaded in corn meal and fried. While I still love this now and then, I find this recipe much lighter and super flavorful. Your trout need to be large enough to pull this off so..... Happy Fishing! Call us when you want to go!
