3/4 c sugar
1 1/2 tbsp cornstarch
1 1/2 tbsp flour
Dash of salt
3/4 c water
2 eggs slightly beaten
1 tbsp butter or margarine
1/4 tsp grated lemon rind
1/4 c lemon juice
12 baked 2" pastry shells

Directions:
Directions:
Combine sugar, cornstarch, flour and salt in medium saucepan. Gradually add water, stirring well. Cook over low heat, stirring constantly until thick and bubbly.
Gradually stir about 1/4th of hot mixture into eggs. Add egg mixture to remaining hot mixture. Cook 2 minutes over low heat stirring. Remove from heat. Add butter, lemon rind, and juice. Stir until butter is melted. Cool slightly then spoon into pastry shells. Cool completely and garnish with cool whip and lemon rind if desired.
