3 C. Flour
1 C. Sugar
2 Tbsp Poppy Seeds
1 Tbsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 1/2 C. Plain Yogurt
2 Tbsp Fresh Lemon Juice
2 Tbsp Lemon Zest
2 Large Eggs
8 Tbsp. Unsalted Butter - melted and cooled

Preheat oven to 375 degrees. Prepare Muffin tin

Whisk flour, poppy seeds, sugar, baking powder, baking soda, and salt together.
In separate bowl, mix together yogurt, lemon juice, lemon zest and eggs until combined. Mix together with dry ingredients until combined. Fold in melted butter. Do not over mix.
Divide batter evenly, bake approx. 20 minutes until toothpick comes out clean and golden brown. Rotate muffin tin halfway through.
