5 lbs. tomatoes, washed, peeled, cored and chopped (about 8 cups)
2 cups chopped onion
1 1/2 cup seeded and chopped jalapeno peppers-wear gloves to protect hands
2/3 cup lemon juice
3 Tbsp. fresh cilantro (I used dry cilantro)
2 1/2 tsp. salt

Directions:

Combine all ingredients in a 6 quart kettle.
Bring to a boil, reduce heat.
Boil gently, uncovered for 30 minutes, stirring constantly.
Ladle into pint jars, leaving 1/2" headspace, wipe rim of jar with a vinegar soaked paper towels, place lid and ring on rim and finger tighten.
Place jar in boiling water bath, makiing sure the water is over the top of the jars by an inch.
Process 15 minutes.
Turn heat off and let sit for 5 minutes.
Remove from pan and set on a towel on the counter to seal and cool completely.
After 24 hours wash in warm soapy water, dry, label and date.
Place in a cool, dark place.
If any didn't seal place in refrigerator and use right away.
