25 lbs. ground meat (pork, chicken, beef)
3/4 lb. Tender Quick
2 cup brown sugar
1 1/2 tsp. black pepper
1 tsp. salt Petre (opt)
1 1/2 tsp. garlic powder
1 lb. powdered milk
5 tsp. liquid smoke
1 quart water

Directions:
Directions:
Grind together meat (grind meat 4 times) and Tender Quick and mix, then let set 24-48 hours.
Preheat oven at 170º.
Mix rest of ingredients with meat, then stuff in cloth bags.
Wrap with heavy duty foil.
Bake 6-7 hours.
Meat is done when internal temperature is 155º.
Cool imediately.
