1 lb. Ground mild Italian sausage
½ medium yellow onion, diced
1 can (28oz.) diced tomatoes
2 T. tomato paste
3 Cups Chicken Broth
2 tsp. garlic minced
2 tsp. Italian seasoning
1 tsp. salt
½ tsp. pepper
1 bag (20oz) fresh cheese tortellini, refrigerated
1 Cup Heavy Cream
2 Cups spinach
parmesan cheese, grated for garnish
Directions:
Directions:
In a heavy bottomed large pot over medium heat, add the Italian sausage. Cook, stirring occasionally and breaking up the meat as you go, for about 8-10 mins, or until the meat is no longer oink. Drain excess grease if necessary.

Add diced onions to the pot. Cook until translucent (about 3-5 mins)

Add the tomatoes, tomato paste, chicken broth, garlic, Italian Seasoning, salt, pepper.

Stir to combine and bring to a simmer.

Add Tortellini, heavy Cream and spinach, stir to combine.

Allow the soup to simmer until the tortellini is tender and the spinach is wilted. (about 8-10 mins)
Serve garnished with parmesan cheese.
