4 fish filets (your choice of - catfish, snapper, sole, tilapia)
1 lemon for zest and juice
¼ cup oil
2 garlic cloves, finely minced
2 tablespoons oil (for cooking)
4 tablespoons of butter (for garnish)
1 lemon wedged (for garnish)
2 springs parsley, finely chopped (for garnish)
lemony buttered garlic (for garnish)

Prepartion:
Rinse fish under cold water
In a large bowl add oil and lemon juice
Submerge fish in oil and lemon juice (some say to drizzle however I like to make sure the fish is completely covered)
Season with KP's favorite seafood season
Season both sides

Grill Time:
Preheat grill to 400-450ºF, coat grill with a high heat cooking oil (avocado or vegetable) these oils prevents sticking to the grill (olive oil and grape seed oil are good choices as well)
Cook for 5-7 minutes, carefully flip the filets, if it is sticking cook for 1-2 minutes longer before flipping, cook filets for an additional 5-7 minutes

For Garnish:
Add zest of butter, lemon, garlic, and parsley and high on meduim heat for 2-3 minutes until butter is melted
Garnish with lemon wedges, lemony buttered garlic and fresh parsley

To prevent sticking - liberally oil both the fish and the clean grill grates, or use a grill basket or aluminum foil packets (can use a skillet (y'all know my choice is cast iron) on medium-high heat, make sure to use oil liberally)
Don't flip too early - wait until the fish develops a crust and naturally releases from the grates (about 4-5 minutes per side) before attempting to flip it
Grilling tilapia directly on the grill only takes 8-12 minutes, the fish is done when it is opaque and flakes easily with a fork, or when it reaches an internal temperature of 145°F overcooking can make it dry or rubbery
I like to finely chop, dice, mince, shred, or slice because I do not like big chunks or pieces in my mouth

Pooh's Fun Facts:
I never measure in the kitchen, I was taught how to cook by my granny and she came from Jackson, Mississippi. I was learning kitchen skills at a very young age and she did everything by sight and taste. I use a counting system; 9 good shakes of the bottle and add more if needed. I almost failed home economics in high because I had a hard time doing it the teacher's way, I was used to turning my chicken with a fork not tongs. I still use a fork!
When it comes to cooking practice makes you flavorful!

Fish should be cooked to at least 145ºF internal temperature
I was taught that bleach is used for cleaning when preparing raw meat and especially any type of poultry
