½ red onion, sliced as thinly as possible (use a mandolin if possible)
2 Tablespoons red wine vinegar
6 Tablespoons olive oil
12 cherry tomatoes
½ teaspoon caster sugar (optional)
1 cucumber, chilled
25 kalamata olives
1 Tablespoon capers
1 teaspoon ouzo or pastis (optional)
1 lemon, juiced
3 springs fresh oregano, leaves picked and chopped or ¼ teaspoon dried
3 teaspoons garlic, minced
1 teaspoon dried basil
½ teaspoon salt (plus some for the tomatoes)
½ teaspoon black pepper
150 g feta
1 head romaine
½ of a red and yellow bell pepper each

Directions:
Directions:
Whisk the vinegar and with ½ of the oil and stir in the onions. Leave to soak for at least 20 minutes up to a few hours.

Cut the tomatoes in half and sprinkle with sugar (if using) and a pinch of salt and leave for 10 minutes.

When ready to serve, rough chop the lettuce, bell peppers and cucumbers into chunks and place in a bowl. Add tomatoes, capers, olives and onions (reserving the soaking liquid). Put the onion liquid with the rest of the oil, lemon juice, oregano, garlic, basil, salt and pepper in a blender and beat until emulsified. Pour a little over the salad and toss. Add more as needed but do not drown the salad. Sprinkle feta on top and serve.
