1½ cups flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 tsp. cinnamon
¼ tsp. nutmeg
1½ cups mashed bananas
6 T butter, melted
⅔ cup brown sugar
1 large egg at room temp
1 tsp. vanilla
2 T milk

Directions:

1. Preheat oven to 425ºF. Spray a muffin tin with nonstick oil spray.

2. Whisk the flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a medium bowl. Set aside.

3. In a stand mixer, mash the bananas. On medium speed, whisk in the butter, brown sugar, egg, vanilla, and milk. Pour the dry ingredients into the wet ingredients and then whisk until combined.

4. Spoon the batter into the tins, filling them all the way to the top. Bake for 5 minutes and then reduce the temperature to 350ºF. Bake for an additional 16-18 minutes.
