Fried Potatoes:
6 or 8 large potatoes
1/2 cup shortening

Baked Potatoes:
1 per person.

Directions:
Directions:
Fried Potatoes:
Heat shortening in skillet.Add sliced potatoes
Press.down with spatula.
Turn over potatoes.

Baked Potatoes:
Wash and dry. Wrap in foil. Bake 425º one hour.

Baked Sweet Potatoes:
Always cut off ends of the potatoes. Wrap in foil. Place on sheet of foil on baking pan. Bake 425º 1 hour.

Personal Notes:
Mom's warning about baking sweet potatoes: "Sweet potatoes ooze a syrup and will explode in oven if ends not cut off. If that happens you can't remove the residue from the hot oven and must buy a new stove."
