4 large tomatoes
8 oz feta cheese
1/4 cup olive oil
2 tsp salt
1 tsp black pepper
1 bulb of garlic
1 1/2 red bell pepper
3 sweet onions
2 large sprigs of rosemary
3 cups of vegetable broth
Crusty bread or sourdough

Directions:
Directions:
1. Cut the garlic in half.
2. Cut up the tomatoes, red bell pepper, and onions. Place on a baking sheet.
3. Add the garlic bulb halves, feta cheese, and rosemary. Drizzle with olive oil.
4. Bake at 400 for 20-30 minutes, until the vegetables are roasted and the garlic and cheese are soft.
5. Put everything in a blender and the broth and puree.
6. Serve with crusty bread or sourdough.
