4 tbsp olive oil
2 red onions diced
4 leek, diced (white part only)
8 stalks celery
3 tbsp kosher salt
4 large zucchini (with peel) diced
4 large sweet potatoes, diced
8 cloves garlic, crushed
2 (15 oz) cans chick peas,rinsed and drained
12 cups water
4 tsp paprika
2 tsp tumeric
2 bay leaves
1/2 tsp black pepper
2 (14 oz) cans diced tomatoes with liquid
1 tsp ground ginger
Directions:
Directions:
Sautee onions and leak.
Add remaining ingredients.Cook for 1hour.
Remove bay leaves before serving
