2 cups sugar
2 Tablespoons butter (I use 3 T)
2 eggs, beaten
1 cup sour cream
1 teaspoon vanilla
2 1/4 cup flour
4 Tablespoon cocoa (I add an extra teaspoon)
Salt - sprinkle some in
1 cup boiling water
2 teaspoons soda

Directions:

Cream together the sugar and the butter. Add eggs, sour cream and vanilla. In a separate bowl mix together the flour and cocoa. Blend into creamed mixture. Boil one cup of water and add the soda to it. Allow time for soda to activate (fizz). Add to cake batter, mix.

Preheat oven to 350º. Spread batter in a greased/sprayed 9x13 cake pan. Bake 33-35 minutes. The center may be just a little jiggly when you take out of the oven.

Cool completely and frost with your favorite frosting.

Honor brought this to my home when we had a mint-making party. Everyone that had this cake knew that it was not a box cake mix. It was so delicioius!
