2 pounds russet potatoes, peeled (can use more, just add more of other ingredients)
medium onion
1 large egg, lightly beaten
1 tsp. salt
1/4 tsp. black pepper
Oil for frying

Optional toppings, applesauce, sour cream, lox, chives

Directions:
Directions:
1. Coarsely grate, potato and onion.

2. Drain the liquid. Squeeze the mixture through cheesecloth or a dish towel.

3. Place in bowl, add egg salt and pepper

4. In a cast iron or stainless skillet, heat 1/8 in oil to 375º.

5. Drop batter by heaping tablespoonfuls into hot oil.
Flatten to form patties.

6. Fry until golden brown, turn over and cook other side.

7. Drain on paper towels.

Serve with toppings.

Personal Notes:
Squeeze out as much liquid as possible, keep unused potato mixture covered while
cooking to keep mixture from turning brown/black. Coloring won't change the taste but it change the color a bit when cooking.
