Ingredients: 1 package Pillsbury refrigerated sugar cookie dough Filling: 1 8-ounce cream cheese 1/2 cup sugar 1/2 tsp. vanilla 1 large can of chunk pnieapple in juice Selection of fresh fruits, including strawberries,blueberries,kiwi,and bananas
Glaze: 1 cup pineapple juice (use juice from canned pineapple. If not a full cup, add water to make 1 cup) 1/2 cup sugar 2 Tbs. cornstarch

Directions:Preheat oven to 350 degrees. Open sugar cookie dough and cut into 1 1/2 to 2-inch pieces and place them on a pizza pan or other flat pan. Mash the dough to the edges of the pan to resemble a pizza crust. Bake 10-12 minutes. Cool completely.
Meanwhile, warm cream cheese to room temperature and mix it with sugar and vanilla, using a hand mixer. Spread this filling onto the cooked, cooled crust.
Arrange sliced fresh fruits over the filling in a pleasing pattern--concentric circles or if your pan is rectangular, in a flag shape, or whatever you like.
To make the glaze, use the juice from the can of pineapple plus water to make 1 cup. Add 1/2 cup sugar and 2 Tbs, cornstarch. Microwave on high 2-3 minutes until thickened and clear. Allow glaze to cool and pour over fresh fruit. Chill until ready to serve. |
