1 large sweet onion
4 cloves of garlic
28 oz tomatoes
3 cups of vegetable broth
salt and pepper to taste
1/4 tsp oregano
1/2 tsp thyme
1/2 cup fresh basil
2 tbsp tomato paste
3/4 cup cottage cheese

Directions:
Directions:
1. Heat oil in a soup pot over medium heat.
2. Add the chopped onion and cook for 5-10 minutes.
3. Add the garlic and cook for 3 more minutes.
4. Add all remaining ingredients to the pot except the cottage cheese.
5. Bring to a simmer and cook for 15-20 mins (the longer the better).
6. Add your cottage cheese and blend your soup with an immersion blender until it's smooth.
7. Serve with crusty bread or grilled cheese.
