2 boxes Uncle Ben's long grain wild rice
1 tbsp olive oil
1 tbsp curry powder
2 c yellow raisins
2 c chopped celery
2 c sliced almonds
2 c spring onions chopped
2 c thawed frozen peas
Diced Chicken - to your taste

Sauce:
1/4 c olive oil
1/4 c canola oil
1 tsp salt
1 tsp sugar
2 tbsp balsamic vinegar
2 tbsp soy sauce
1/4 c chopped parsley

Directions:
Directions:
Cook rice according to the package directions while adding olive oil and curry to water.
Cool rice then add the rest of ingredients, except sauce ingredients.
Just before serving mix sauce ingredients together and mix into rice mixture. Serve cold.

I have tried craisins , chopped apples, turkey, ham, pecans, etc.
