Ingredients: 1 T. Olive Oil 1 lb. Cooked shredded chicken. 1 pkg. taco seasoning 1 tsp. cumin ½ Cup diced onion, sauté with 2 cloves minced garlic 1 Can diced tomato, 14.5 oz, fully drained. 1 can chopped green chilies 4.5 oz, drained 10 stand and stuff taco shells 8 oz. refried beans 2 cups Mexican blend cheese, shredded Toppings: sliced jalapenos sour cream salsa cilantro lettuce any other favorites

Directions:Preheat oven to 400º. Spray 13 by 9 with nonstick spray. Heat olive oil in skillet over medium high heat. Add onion and garlic, sauté for 3-4 minutes. Stir in chicken, taco seasoning, tomatoes (fully drained)and green chilies, also fully drained. Stir to combine completely. Reduce to a simmer and allow to cook for 5-8 minutes. Place taco shells in 13 by 9, standing up. Bake for 5 minutes to allow them to crisp up. Remove from oven. Spoon 1 T. of refried beans into the bottom of each shell. Top with chicken mixture, almost to the top of the shell. Sprinkle each generously with the cheese. Bake for 7-10 minutes or until cheese is melted and the edges of the shells are golden brown. Remove from oven and top with your favorite toppings.
