9 lbs. apples peeled, cored and sliced.
5 cups pasturized apple juice
sugar

Peel, core and slice apples.
Need a large container to hold the apples and sugar.
Layer : 5 cups apples, 1/2 cup sugar
5 cups apples, 1/2 cup sugar
5 cups apples, 1/2 cup sugar-so on until all the apples are used up.
Weight it down with a plate because it will develope a lot of juice.
Let it sit on the counter for 12 hours.
Drain the juice into a saucepan and add 5 cups additional apple cider-heat on the stove.
Pack the apples in the jars leaving 1" headspace.
Add the hot juice to the jars and fill to 1/2' headspace.
Wipe the rims with a paper towel dipped in vinegar and place the lid and ring on the rims.
Finger tighten only and place the jars in the water bath and process for 20 minutes at a rolling boil for both quarts and pints.
