2-8 center cut rack of pork
1/4 cup dijon mustard or olive oil
1/4 cup Montreal steak seasoning
2 carrots
1 small onion
2 stalks of celery
6 cloves of garlic peeled

Directions:
Directions:
Preheat oven to 450ºF.

Add vegetables and garlic.

Rinse pork and dry well. Place the pork with the fat side up on top of the vegetables. Apply a liberal amount of olive oil and rub it into the top of the roast.

Sprinkle entire rack with Montreal steak seasoning.

Place pan in oven for around 15 minutes. Then reduce heat to 375ºF. Continue cooking roast for 1.5 to 2 hours until the internal temperature has reached 160ºF for well done or 145ºF for medium.

Remove rack and let rest for 10 to 20 minutes before slicing.

Take out vegetables.

Make gravy by adding 2 cups of water in roasting pan and scraping the bottom. Make a rue and add it (flour and butter).
