About 3 3lb roasts for around 20 people

2.5 lbs pork loin roast

Rub:
2 tbsp herbs de Provence
1 tbsp onion powder
1 tbsp light brown sugar
2 tbsp olive oil
1 tbsp lemon juice
1 tsp crushed garlic

Gravy:
7 tbsp flour
7 tbsp butter
3/4 cup chicken broth
1/4 cup beef broth
1/2 cup wine
1 tsp pork base
some gravy master

Directions:
Directions:
Preheat oven to 450ºF.

Make rub herb mixture with ingredients above.

Season roast with salt and pepper. Rub the roast with the herb mixture.

Place in shallow roasting pan. Roast at 450ºF for 20 minutes and then reduce heat to 325ºF for about an hour or more. (Figure around 30 minutes per pound.) Roast until internal temperature is 155ºF.
Allow to rest for 10 minutes.
Make gravy.
