Directions:Remove silver skin from the ribs. Cover front and back with your rub. If you have time, let refrigerate overnight. If not, that's ok too. Prepare the smoker, should be 225 to 250º. Put the ribs on the smoker when up to temp. Have a spray bottle ready with 50/50 apple juice an apple cider vinegar. Add a couple chunks of wood to the briquettes to get the smoke rolling. Close the smoker. Cook at 225-250º for approximately 3 hours. Spritz every 30 Minutes with spray bottle. After 3 hours, remove the ribs and place on a large sheet of heavy tin foil. Add 4 pats of butter, a couple tbs. of apple juice, and drizzle honey across the ribs. Dust again with the rub. Close the foil tightly. Place in the smoker, again meat side down. Cook another 2 hours. Remove from smoker. Unwrap, remove from foil. Put back on the smoker. Glaze with favorite BBQ sauce. Cook for approximately 1 hour or until desired tenderness, adding more sauce if desired after they are removed from the smoker. Let rest for 30 minutes before cutting and serving. |

Notes: You've all had his ribs many, many times over the years. You've requested them and he has happily prepared them for you. But did you realize the time he put into them each and every time? I hope you continue to make these with the same love he has for you. You all know we often make our own sauce, but your favorite sauce is whatever you choose. Dad sometimes buys a rub but usually makes his own. But it's always on the fly, so you can pick his brain about that, buy one, or experiment making your own too.
