1/2 pound green beans, trimmed
2 T chopped walnuts
2 T dried parsley leaves
2 T chopped red onion
2 T olive oil
1 tsp red wine vinegar
1 tsp Dijon mustard
Dried cranberries, as many as desired
salt and pepper to taste

Directions:

Bring a large pot of water with a steamer to basket to boil. Add green beans and steam 4 minutes. Transfer to serving bowl. Toast the walnuts in a small, dry skillet over medium heat until they become fragrant (about 2 minutes). Transfer to a small bowl to cool. Add parsley and onion to walnuts, stir to combine. In another bowl, whisk together olive oil, red wine vinegar, and mustard. Toss the dressing with the green beans. Add walnut mixture and season with salt and pepper. Add the cranberries and mix all ingredients together.
