2 lbs chicken breast
8oz cream cheese
1 can Rotel
1 large can green enchilada sauce
10-12 tortillas
2 cups shredded cheese
Sour cream, olives, refried beans for serving

Directions:
Directions:
1. Boil chicken breasts and shred. Stir in cream cheese and rotel and warm in pot until cream cheese is melted.
2. Fill tortillas and roll into enchiladas, place into 9x13pan. Pour green enchilada sauce over the tortillas and top with cheese.
3. Cook at 350º for 15-20 minutes or until warm and bubbly.
