2lbs ground beef
1/2 onion, chopped
1 Tablespoon minced garlic
1 packet taco seasoning
1/2 packet Mexican street corn mix (Fresh Success)
Adobo seasoning to taste
1 can Rotel (diced tomatoes + green chiles) Mild
1 can corn, drained
1 can black beans
1 can pinto beans
1 can kidney beans
1 can Chickpeas
3 cups beef broth
1 zucchini peeled and diced

Directions:
Directions:
1. In a large pot, brown the ground beef with the chopped onion. Drain excess fat with strainer then put back in pot.
2. Add all seasonings and garlic.
3. Add Rotel, corn, beans, and beef broth. Stir well.
4. Bring to a boil, add zucchini then reduce heat and simmer 30 minutes. (You can also toss everything into a slow cooker on LOW for 4–6 hours.)
5. Add salt, pepper, or more broth if needed.
6. Serve over Jasmine or Basmati rice

* Sour cream
* Tortilla chips or strips
