Quick Brine-Boiled Chicken for Grilling

For about 3–4 lb chicken pieces (legs/thighs/drumsticks):
• 3 quarts water
• ½ cup kosher salt
• ¼ cup sugar (white or light brown)
• Optional aromatics (totally flexible):
• 4–6 garlic cloves, smashed
• 1–2 bay leaves
• A few peppercorns
• A sprig of thyme or rosemary
• 3–4 lb chicken pieces

. Make the brine
1. In a large pot, add water, salt, and sugar.
2. Bring to a boil, stirring until salt and sugar are fully dissolved.
3. Add any aromatics you want.

2. Brine-boil the chicken (your remembered 20-minute step)
1. Add the chicken to the boiling brine.
2. Return to a gentle boil, then immediately turn down to a strong simmer.
3. Cook about 15–20 minutes, until the chicken is mostly cooked through (165°F in the thickest part if you want to be precise, or very close to it).
4. Use tongs to remove the chicken to a tray or rack.
5. Let it steam-off and dry a bit (5–10 minutes). Pat dry with paper towels so it browns nicely on the grill.
