Ingredients: Crust: 3/4 cup butter, softened 1 1/2 cups flour 1/3 cup powdered sugar
Filling: 4 eggs 1 1/4 cups sugar 1/2 cup lemon juice 1/2 tsp vanilla extract 1/3 cup flour

Directions:Crust: 1. Preheat the oven to 350 2. Add butter to medium mixing bowl and blend with an electric mixer for about a minute or until it is fluffy. 3. Add the flour and powdered sugar and mix until it forms a soft dough. 4. Press the dough into a greased 9x13 baking dish until it covers the bottom of the dish and is mostly flat 5. Bake the crust for about 20 minutes or until it just starts to look golden brown.
Filling: 1. Meanwhile, in a medium mixing bowl combine the egg whites and sugar 2. Mix in the lemon juice and vanilla extract 3. Blend the flour into the mixture, it will still be very runny. 4. Pour the filling over the cooled crust, making sure the filling completely covers the crust. 5. Bake for about 25-30 minutes or until the filling is firm. 6. Cut the lemon bars into squares and sift powdered sugar over the top. |
