Directions: |
Directions:Peel the potatoes (can leave the skin on if that's what your taste buds are into, just make sure to scrub them well) and cut them into thirds (see Pooh's notes of love) Add them to a large pot of water and boil on medium-high heat (30-45 minutes depending on desired tenderness) or until a fork easily pierces them (can add about 2 teaspoons of salt to water if desired, just remember when you season at the end to prevent saltness) Drain the potatoes thoroughly and return to pot or large bowl Add cream, garlic, salt, pepper, and parsley Mash with masher (see Pooh's notes of love) Add butter |

Notes: Pooh's Notes of Love: This is one of the only times I cut the potatoes bigger than usual Mash until the cream has been absorbed and you've got a nice, smooth mash. Don't over mash or they may end up thick and gluey; be gentle and fast May add more cream or milk until desired smoothness is reached Add more salt and pepper until desired taste is reached The taste of the fresh garlic in every bite takes these potatoes to another level
Pooh's Fun Fact: I love me some potatoes rather baked, mashed, or fried I keep a box of instant potatoes for fast and easy mashed potatoes, and yes they taste just as good as home made I never measure in the kitchen, I was taught how to cook by my granny and she came from Jackson, Mississippi. I was learning kitchen skills at a very young age and she did everything by sight and taste. I use a counting system; 9 good shakes of the bottle. I almost failed home economics in high because I had a hard time doing it the teacher's way, I was used to turning my chicken with a fork not tongs. I still use a fork. When it comes to cooking practice makes you flavorful!
