1/2 cup raw green pumpkinseeds **
1/4 cup. butter
1 (8oz) package miniature marshmallows (about 5 c)
1t vanilla extract
1/8t salt
5 cups oven toasted rice cereal (such as Rice Krispies)
1 cup dried cranberries

** I use ready to eat pumpkinseeds; easier to find and work just as well.

1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add pumpkinseeds; cook four minutes or until seeds begin to lightly brown, stirring frequently. Remove from heat and cool.
2. Lightly coat a 13x9 inch baking dish with cooking spray; set aside.
3. Melt butter in a large saucepan over medium heat. Stir in marshmallows; cook until smooth, stirring constantly.
4. Remove from heat and stir in vanilla and salt. Stir in reserved seeds, cereal, and cranberries. Scrape mixture into prepared dish using a spatula.
5. Lightly coat hands with cooking spray ( I use food safe latex gloves); press cereal evenly into prepared dish. Cool completely. Cut into 16 bars
