4 large sweet potatoes (washed and scrubbed thoroughly)
1 stick butter
2 cups granulated sugar
½ cup brown sugar
¾ cup heavy whipping cream
3 teaspoons cinnamon
1 teaspoon nutmeg
½ teaspoon ground clove
¼ teaspoon ground ginger
2 tablespoons 100% pure maple syrup
2 teaspoons real vanilla extract

Preheat oven to 350 F.
Cut off the tips of sweet potatoes, peel and then cut into squares or circles (I like to rinse them one good time after cutting them)
Place potatoes into a 9x13 baking dish and set aside (I like to use throw away aluminum pans for easy clean up, no mess- no fuss)
Mix spices together in small bowl
In a medium size pot, melt butter over medium-low heat
Add sugars and stir until combined
Add heavy whipping cream and stir until creamy
Stir in spices, maple syrup, and vanilla extract; stir until creamy and well combined
Taste mixture and adjust spices and sugars if needed
Pour mixture evenly over sweet potatoes
Cover with plastic then foil and bake for 45 minutes
Remove plastic and foil, baste and bake for an additional 20-25 minutes or until fork-tender
Serve immediately (Plate the candied yams using a slotted spoon)

When cutting the yams it is important to cut in equal sizes when possible to ensure even cooking throughout the pan, use a cutting board if need be to make it easier.

Fun Fact:
I had a co-worker who brought a pan of yams for a Thanksgiving potluck around 2010 or so, when I tell you those were the best yams I ever had; I was determined to learn how to make them and I get better every year!
