1 stick butter
4 lbs yellow squash (about 7 medium squash)
2 cups onions diced
3 tsp kosher salt
3 eggs, lightly beaten
10 oz sour cream
2/3 cup shredded Swiss cheese
1 1/3 cup shredded sharp cheddar cheese
2/3 cup mayonnaise
2 tsp black pepper

Directions:
Directions:
Sauté cleaned, sliced squash in butter with diced onion and salt. Once squash is slightly tender, drain off excess liquid. Mix together all other ingredients and add to the sautéed squash. Put everything in 9”x13” pan and cook at 350º for 30-40 minutes. You can top with cheese or buttered crushed crackers or leave with nothing else on it.
