Favorite smoke meat
One onion finely chopped
Garlic powder
Onion powder
Goya all purpose seasoning
Salt and pepper
Apple cider vinegar or lemon juice
Smoked paprika
Instapot or large dutch oven

Step 1-take four to five of your smoked turkey hocks (favorite smoked meat) put them in your large pot and ½ of your seasonings and your chopped onion. Cover the meat with water and let come to a boil. Reduce to medium heat and cover and let cook for about 45 min, checking the pot for water level. You want to keep the meat with just enough water to cover it and as the meat begins to softened and fall apart.

Step 2-Let’s cut and clean the greens while the smoke meat is cooking down and seasoning your water. Begin by breaking take a leaf of the greens and stripping the leaf from the stalk. Take the leaf and lay it on the cutting board shiny side up. Repeat this process and stack each leaf on top of the other until you have a manageable stack that can be rolled. Take your rolled stack of greens and cut them aprox. ¼ in. I call my cut a shoestring cut. You may cut your greens to whatever desired width you like. Take your cut greens and put them in your strainer and rinse and wash them repeatedly until there is no visible or gritty feel in the greens.

Step 3- Add the clean washed greens to your meat pot. Add a little at a time being sure to incorporate the meat and greens. They will begin to swelt down as you add them to the pot. Continue to mix them in until all your greens are in the pot. Once they swelt down more add your remaining ingredients, making sure they are mixed in thoroughly in the pot. Cook for about 30 min. Or until your desired texture of greens.

SN- Using an Instapot/pressure cooker will cut your cook time in half. Follow the same directions except cook times. For the meat 20-30 minutes should be enough or until meat is cooked down until it falls apart. The greens will cook really fast aprox 15-20 min.

Serve with your favorite entree and cornbread or apart of your whole southern throwdown.

The Collard greens

Nowadays we call that special dish that someone makes their “Signature Dish”. Back in the day and still at family gatherings we designate the best cook to make our family favorites. Well, early on I became the queen of collard greens for my family. They never called me that but I feel it was a fitting title.

I learned the art of preparing greens from my grandfather Pet. Pet was a nickname he gave me and being the first grandchild I gave him that nickname back, so everyone called him Pet. I watched how he maticulously picked the greens to ensure there was no bugs, then he would wash them until all the dirt was washed free. What was left were these beautiful green leaves that were cut into bite size bits and cooked in some good ole smoked meat of choice.

I truly miss my grandfather, we all have a little bit of Pet in us from his infectious laughter and humor to his faith in God. He believed in family and us loving one another. I treasure those moments watching him cook up some goodness at the stove and I hope you create your own memories for you loved ones to carry on for generations to come.
