2 lbs pecans
¼ cup butter
½ cup brown sugar
¼ cup maple syrup
2 tablespoons Mixed Up Crazy Salt (if Cajun mixture has salt, reduce this)
4 tablespoons Cajun seasoning
4 tablespoons curry powder

Directions:
Directions:
Preheat oven to 275ºF.

Melt butter with the sugar and the syrup. Cook until bubbly and sugar has melted. Toss the Cajun spices, crazy salt and curry powder with the nuts. Pour the sugar mixture over the nuts and toss until the nuts are completely coated.

Spray a ½ sheet pan with Pam. Pour the nuts onto the pan and spread evenly over the whole pan. Bake for 15 minutes. Pull the pan out of the oven. Toss the nuts around and then once again spread evenly around the pan. Bake for another 15 minutes and once again toss the nuts. Repeat this process 3 more times so that you have baked the nuts for 1 hour and 15 minutes. Remove from heat and let cool completely. Will store in an airtight container for months.
