Directions:Mix together water, yeast, and 1 tablespoon of brown sugar; set aside to bloom. Scald the milk and allow it to cool to lukewarm.
Cream together the softened butter and remaining tablespoon of brown sugar until smooth and fluffy, mix in the yeast, then mix the milk into the mixture and mix in the eggs. Now sift in half if the flour and salt; mix til almost fully incorporated then add remaining flour and mix until fully combined and a dough forms. The dough is to soft to knead so mix the dough hard for a few minutes (this can all be done with a stand mixer). Cover the dough and let rise for a hour.
When dough has doubled in size punch it down and begin forming the rolls by dividing the dough into equal portions (i made 12, each weighed 88grams). Slightly stretching the dough balls and folding them into itself making a smooth top. Pinch the bottom seams together and place roll on a lightly greased 9x13’ pan. Repeat with all the dough. (Make the rolls as big or little as you prefer). Brush melted butter ontop of rolls. Cover the rolls with plastic wrap and a towel, allow to rest/rise another hour. After another hour the rolls should be doubled in size. Brush with more melted butter if desired and bake at 400°F for 18-20 minutes. Remove from oven and brush with more butter. Enjoy |
