Angela's Sicilian Arancini (Rice Balls) Recipe

Ingredients: RICE 12 cups Arborio rice 10.5 cups of water one stick of butter 3 beef or chicken bullion cubes salt and pepper Saffron to give the rice color
FILLING 3/4 lb of lean ground beef 1 medium onion chopped tomato paste frozen peas water bay leaves salt and pepper

Directions: |
Directions:RICE 1) Cook the rice make sure it has absorbed all the water 2) Place the rice in a Pyrex dish and smooth over evenly. Cover the rice with plastic warp while still hot. The plastic wrap needs to be touching the rice so there are no air pockets so it does not crust. 3) Set rice aside and let it cool
FILLING 4) Sauté 3/4 lb of beef and drain the fat and set aside 5) Make tomato sauce olive oil in a pan, sauté onion, add 3 tbs of tomato paste, heat and stir. Add 1 cup of water, the cooked beef, 1 cup of frozen peas 6) Cook for about 1/2 hour stirring occassionally until very thick. 7) Set aside to cool
RICE BALLS
8) Make a ball the size of a baseball or tennis ball 9) Poke a hole in the top and place 1 tbs of filling in the center of the rice ball and then seal the opening off. Set rice balls aside
Frying rice balls:
10) Make flour mixture by adding flour to water and stirring to reach a consistency of milk 11) Dip the rice ball in the flour mixture and then in to the bread crumb. Press and squeeze with both hands so that the bread crumbs neatly cover the rice ball. Place on a tray with parchment paper. 12) Deep fry the rice balls in vegetable oil until golden brown |

Mrs. Di Maggio son worked in the B & G department in the Jericho School District. One Day Marcel brought some of the rice balls to work to share with us. Fortunately, I happened to be visiting at B & G Office and was lucky enough to get to sample these amazing rice balls.
They are the best I have ever had!
